A stone mill on the river in the Aveyron hills, with timber rafters overhead and picture windows looking straight onto the water. Two chefs who trained across the kitchens of Pierre Gagnaire and Alain Ducasse now run a Michelin-starred restaurant here together, cooking seasonal French food so ingredient-focused that the menu lists dishes by their components alone. The setting does half the work; the kitchen handles the rest.
