The open kitchen faces a Plateresque church façade so ornate it looks like someone carved an entire altarpiece into the stonefront, which sets an appropriately theatrical mood for what's inside. This is a Michelin-starred tasting menu restaurant where the chef builds modern Castilian cooking from local and traditional roots, with two menus that differ mainly in how long the evening goes. Iberian pork runs through both like a through-line, and the wine pairing is in very good hands.
