The chef here tends his own garden, forages what he can't grow, and sources the rest from producers he's vetted himself, which gives this Michelin-starred restaurant outside Toulouse a quietly serious personality. There's no performance to the room, just a low-key interior and parasol-shaded tables outside. Finishing touches of jus, flowers, and coulis show up, but subtly. The shop next door sells organic bread and pastries in case you want to extend the mood.
