    A boutique hotel inside a restored hilltop fortress outside Girona, built by the three brothers behind El Celler de Can Roca. Suites run to cork ceilings, raffia rugs, and freestanding tubs aimed squarely at the Empordà panorama. The terraces and L-shaped pool make the most of 360-degree views. A dessert-focused tasting menu handles dinner, because of course it does. The hotel holds a Michelin Key.
