A three-Michelin-star chalet perched above Megève, where the chef forages the Alps and Lake Geneva for what goes on the plate: char, wild herbs, mountain cheese, and the occasional langoustine that has no business being this high up. Emmanuel Renaut grew up besotted with Haute-Savoie, and it shows in every course, though he clearly enjoys pushing against the rustic-mountain-cooking expectations that come with the address.
