The Roca brothers named this restaurant after their mother, Montserrat Fontané, and the food follows the logic of that dedication: traditional Catalan home cooking, recreated in a castle on a mountain summit with a wooden deck and views that make the whole thing feel slightly surreal. The suquet de cabracho arrives on a tomato tartare base rather than the usual broth, which gives you a sense of how "modern twist" is being applied here.
