The Michelin-starred dining room upstairs opens onto the kitchen, and the cooking follows what the chef calls the "52 seasons," a hyper-local calendar of wild plants, lake fish, and game sourced within 30 kilometers. Pale wood, local ceramics, and an organic wine cellar round things out. Guestrooms are available if leaving feels wrong.
