    The Gorgoli Valley sits just outside town, and the kitchen treats it as a personal pantry. This straightforward, simply decorated restaurant in the village of Mustafapaşa builds an extensive menu around what grows nearby, aubergine, peppers, slow-cooked lamb, all handled with the kind of restraint that lets the ingredients do the talking. The Cappadocia you came to photograph is right outside; this is where you eat after.
