  1. A one-Michelin-star restaurant inside a former cloth mill on the River Orb, where the granite and timber bones of the old building are very much still doing the work. A glass-enclosed wine cellar anchors the room and signals what the kitchen's brother is up to: a Languedoc-heavy list with food pairings that actually think. The chef applies a southern French sensibility with a light, improvisational hand, while front-of-house runs with the kind of ease that makes it all feel effortless.
