Halfway between Seville and Cádiz, this boutique hacienda sits on a working olive farm, which does set a certain tone. Rooms open onto a central courtyard and run large, with king beds, private verandas, and marble baths dressed in an eclectic Andalucian-Indian-Zimbabwean mix. The pool suites are essentially private villas. Three pools nestle among citrus and olive groves, and the restaurant leans on market-fresh Andalusian cooking. Small-scale by design, and the better for it.
