Hambleton Hall is a country house hotel dining room holding a Michelin star, where the kitchen has been run by the same chef since the early nineties, long enough to have a signature without trying. The cooking is classical but not frozen in amber, and the wine list runs to 400 bins, clearly someone's life's work.
