A 13th-century rectory tucked beneath a parish church in the Sausal wine hills is an unlikely place for a Michelin-starred tasting menu, and yet here we are. The kitchen runs a five- or seven-course surprise menu, booked online with optional wine pairings, and the cooking toggles between subtle and bold contrasts without ever losing its footing. The sommelier reads the room as naturally as he reads a label.
