The open kitchen turns out inventive, occasionally daring plates built around Dutch ingredients, with elegant presentation and the kind of bold flavours that suggest the chef has something to prove. The Michelin Guide has taken notice. The adjacent wine bar, for a glass and some snacks, is worth the detour.
