A grand chandelier hangs above what was once a village inn, and the building still feels like one, warm and a little ceremonial at the same time. This Michelin-starred restaurant in rural Groningen has dropped dairy, beef, and pork entirely, leaning into vegetables, fruit, and a deep affinity for Asian fermentation techniques. The beer menu is taken as seriously as the wine list anywhere else. Lovely guestrooms upstairs if you'd rather not drive home after.
