Higashiyama Ogata

The counter is a single slab of wood, and behind it a small team of apprentices from the parent restaurant Ogata work in quiet sync, a Michelin-starred Japanese dining room where the cooking is almost willfully understated. Hot-pot dishes and food grilled over a charcoal brazier arrive with very little fuss and a great deal of flavor, which is sort of the whole idea. Restraint as a philosophy takes practice, and here it shows.
