A converted Edwardian hospital where no two of the fifty-nine rooms share a floor plan, which would have made the original administration deeply uncomfortable. This Hotel du Vin keeps the red-brick bones and period details while adding parquet floors, rain showers, and espresso makers. There's a REN spa with a pool, plus a bar and library that make it hard to leave the building at all. The restaurant leans into modern British cooking.
