Hotel Sahrai

Perched on a hill between the medina and Fes's modern quarter, Hotel Sahrai is a boutique hotel built on a simple premise: go see the ancient city, then come back to an infinity pool and a rooftop bar where the view of the medina at sunset does most of the talking.
