The kitchen riffs on Alpine tradition with a loose, creative hand, and sommelier Christoph Janger steers a wine list of some three thousand labels without breaking a sweat. Set menus run from five to nine courses, though à la carte and a classics menu keep things flexible for the commitment-averse.
