Built into the flooded rock walls of a former quarry in suburban Songjiang, this luxury resort is what happens when engineers are handed a problem that probably should have stayed unsolved. Rooms descend below the waterline, sunlight arrives anyway, and the whole thing earns a Michelin Key for experiences that don't map onto anywhere else. Packing light feels beside the point when the hotel itself is the destination.
