    Most Santorini hotels make you pick your view: black sand beach or caldera. Istoria refuses the choice, running two properties at once, a beachside cluster in Perivolos and cave-house suites on the cliffs at Firostefani. The design goes well beyond the island's obligatory white and blue, leaning into earth tones and handmade textures. Each suite comes with a plunge pool or hot tub. The Michelin Guide awarded it one Key.
