    Basque

    The terracotta floors, wooden rafters, and copper pots have been here forever, and the view out front is still the village pelota wall. This Michelin-starred restaurant in a classic Basque inn runs on its own kitchen garden and local producers, with two brothers now cooking where their uncle did before them. The food is refined but rooted, as Basque as the building around it.
