A plaque on the wall reads "Timing is everything," which turns out to be the whole philosophy here. This is a tonkatsu shop built around aged pork, sourced from a Fushimi butcher and rested before it ever meets the fryer, where it goes in twice at low temperature. The menu lets you pick your cut and grade, so there's a mild amount of homework involved. The pork katsu curry, spiced with ginger, is a reasonable excuse to stay longer.
