A surprise tasting menu, six to ten courses, served upstairs in a small, chic dining room inside a former Cistercian monastery's old guesthouse. The setting does a lot of the work, but the kitchen earns its place with seasonal cooking that moves between classical and modern without getting lost. On a fine evening, aperitifs go on the terrace with a view of the monastery church, and the vaulted cellar cigar lounge waits at the other end.
