    A former Formula 1 journalist who traded the paddock for the Sierra de Guadarrama is not the origin story you expect from a Michelin-starred tasting menu. Set in what used to be the family bar in a small Madrid-region village, the chef builds his Capricho menu around mountain-sourced meats, local vegetables, and aromatic plants his team picks weekly, lavender and thyme among them. The room mixes rustic and modern without overthinking it.
