Pierre Augé is one of those chefs who greets every table personally and means it, which sets the tone for this creative Mediterranean restaurant near the Béziers bullring. The menu leans on local ingredients but takes detours, beef marinated in whisky, hake with a bright green jus, stracciatella lifted with asparagus and bacon tuile. His wife runs the front of house with the same warmth, so the room never feels like it's performing.
