    On an island ringed by canals in the Brière Regional Nature Park, chef Éric Guérin runs a one-Michelin-star restaurant where birds roam the garden and the cooking feels cut from the same marshland fabric. The food is delicate and a little poetic, rooted in the surrounding terroir but shaped by a restlessly creative hand. The kind of place where you eat, look outside, and wonder if you're still in France.
