This small luxury hotel in Vienne, just south of Lyon, sits on ground where modern French cuisine was more or less invented, and the place carries that history without waving it around. Nineteen rooms and four suites were redesigned in 2024, and the wine cellar holds one of the more remarkable Chartreuse collections you'll find anywhere.
