The trompe-l'oeil olive is the tell: it looks exactly like an olive, then bursts into something else entirely in your mouth. This is a one-Michelin-star fine dining restaurant inside the Renaissance Hotel, where olive greens and exclusive materials keep things intimate without tipping into stuffy. The chef leans deep into Provençal produce, and the open kitchen counter lets you watch him make the point. A terrace flanked by two actual olive trees completes the picture.
