A three-Michelin-star restaurant perched above a wild cove outside Cassis, with the kind of Mediterranean view that makes it hard to concentrate on the food, except that the food demands concentration. The chef came down from Normandy and fell hard for Provence, and the cooking shows it: light, precise, quietly surprising, pulling from the land and the sea in equal measure. Dress up; this is a serious room.
