    A hotel restaurant in Val-Cénis that skips the mountain-lodge greatest hits and runs a surprise menu built around whatever the kitchen found that day. Arctic char, Termignon blue cheese, Aubrac Wagyu, wild herbs foraged from the surrounding slopes: the menu shifts, so you eat what the season hands over. The room is unfussy, the kind of place where the food clearly received all the decorating budget.
