L'Auberge
Belgian French
Leather banquettes, wood panelling, and copper fixtures give this brasserie in the middle of Spa's town square the feel of somewhere that has never felt the need to redecorate, which is a compliment. The menu runs to Belgian classics, the kind that assume you came hungry: mussels in white wine, veal kidneys cooked in the Liège style, and crêpes to finish. Regulars fill the room and rarely bother with the menu.
