Mélanie Serre, who came up under Joël Robuchon, runs this modern French restaurant at the tip of Cap Ferret where the view swings between open sea and seagrass depending on the tide. The cooking is classically rooted but a little restless, moving from pâté en croûte to beef Wellington with a bistro ease that makes both feel right. The wine list runs from modest natural bottles to something considerably more serious.
