  1. The name comes from the ouvrée, the 428 square meters of Burgundy vineyard a single worker could tend in a day, and the restaurant leans into that specificity at every turn. It's a modern dining room inside a small hotel in Savigny-lès-Beaune, where the wines are local, the tableware is handmade, and the chef builds a clean, produce-led menu that doesn't need to shout about the terroir because the terroir is already doing the talking.
