    The glazed roof turns the patio into something between a greenhouse and a dining room, which suits the cooking well: this is a Michelin-starred modern restaurant built around the larder of South-West France. Landes asparagus, Pauillac lamb, foie gras alongside crème brûlée, pollock paired with pig's trotters. The combinations sound provocative on paper and arrive looking theatrical on the plate.
