The dining room ceiling is hung with 36 blown-glass orbs meant to suggest champagne bubbles, which sets the tone nicely. This is a Michelin-starred fine dining restaurant in a luxury hotel on the vine-covered slopes between Reims and Épernay, and the kitchen leans into that heritage with seasonal, classically rooted French cooking. The cellar leans into it even harder. Napoleon allegedly stopped here once, which the room has not let anyone forget.
