A former convent turned boutique hotel in the old town, Le Saint-Gelais kept the calm stone exterior and the hushed atmosphere, then quietly replaced everything else with modernist furniture and bold graphics. The monastic layout has been opened up and the color palette is thoroughly contemporary. The in-house restaurant, Père Deval, runs French classics alongside sharing plates for apéritif hour. Note that reception closes at nine, so late arrivals should call ahead.
