    Trout from a local fish farm, pigeon from the Costières plains, fruit from nearby orchards, and wild herbs pulled from the surrounding hillsides: the kitchen at this Michelin-starred inn on the edge of the Cévennes runs on serious regional conviction. Blind tasting menus only, so you eat whatever the season has handed the chef that week. The dining room is soft-hued and bright, and the garden terrace makes a strong case for lingering.
