The view over the Monts d'Aubrac alone explains why people drive this far into the plateau. Le Suquet is a fine dining restaurant where Sébastien Bras builds his menus around whatever the surrounding landscape offers, flowers and herbs from his own gardens included. The building feels almost too futuristic for such ancient countryside, which turns out to be the point. A Michelin star, a serious wine list, and guestrooms if the drive back feels unkind.
