This Michelin-starred restaurant in the flat, spare heart of Castile has built its entire identity around hunting and the land around it, folding contemporary technique into old regional recipes without losing either. The tasting menus lean heavily on stews, escabeches, and whatever the season produces, but pigeon is always the thread.
