A restored military barracks inside the medieval walls of Aigues-Mortes, Les Remparts is a boutique hotel where the exposed stone is thick enough to repel a siege and the freestanding bathtubs suggest you've come in peace. Rooms are individually decorated with bold accents and contemporary furniture, some with fireplaces and views of the 13th-century Tower of Constance. There's an indoor pool, a spa using local Camargue pink salts, and a cocktail bar that opens onto a panoramic terrace.
