    The dining room of this Michelin-starred restaurant in Biot was once a potter's kiln, and the old oven now anchors a cozy lounge that feels like a gentle joke about how much heat a kitchen really needs. The chef trained with Alain Ducasse and Roger Vergé, and the cooking shows it: Mediterranean through and through, built on market produce, Menton lemons, courgette flowers, and truffle when the season calls for it.
