    The cheese trolley arrives loaded with well-matured local finds, and the sommelier materializes beside it like he was always planning to. This contemporary French restaurant in Martigny has been an old-school institution, now run by two regional chefs who keep things rooted in local produce. Lunch is priced with rare common sense. Come summer, the terrace fills up and the whole thing tips from civilized into something approaching heavenly.
