The sourdough, the smoked butter, the ice cream: all made from scratch in what was once a station hotel in a village you'd otherwise drive straight through. Liberté is a seasonal tasting-menu restaurant where the chef and his wife run the whole show, he in the kitchen and she on the floor, drawing from an herb garden next door and whatever's growing wild nearby. Heroically rustic is one way to put it.
