The last ten minutes of the journey happen by boat, which sets the tone for everything that follows. This is a four-room farmhouse hotel on a private rocky island in the North Sea, restored by two Bergen designers with a sharp eye for antique Scandinavian folk style and a sane amount of restraint. Meals are plant-based and largely foraged; there are no shops to pop down to, because there is nothing around for miles.
