A converted monastery in the Monferrato hills, where the old lemon-tree house doubles as a dining room and Enrico Bartolini's two Michelin stars hang over the kitchen. The chef running the stoves day-to-day grew up on Piedmontese cooking and it shows, from a deeply traditional agnolotti del plin to dishes that push the region somewhere more inventive. The bread and focaccia alone set an early standard the kitchen then has to meet.
