A restored Tuscan hamlet perched between Montepulciano and Montefollonico, where the chef decides the menu each morning based on whatever the estate has produced. Dinner is al fresco in warm weather, and a glass of the sunset comes free. In cooler months the dining room looks straight into an open kitchen. The road to get there is genuinely pastoral, which is the point. Book ahead if you're not sleeping here, and don't expect a printed menu to study on the way.
