The name nods to the clay-rich soil around this Utrecht province town, and the kitchen takes that literally, building a surprise tasting menu from local gardens and food forests while pulling in ferments like koji and miso for the international lean. The room has a spare, woodsy calm to it. Sauces are where the cooking often lands hardest, a red wine and cardamom reduction with venison being the kind of thing people mention afterward. Michelin one star.
