    A one-star Michelin restaurant tucked into a wine-producing village in the Fiefs Vendéens, where the chef, a former sous-chef at Alexandre Couillon's La Marine, has fitted a very contemporary dining room into a building that's been around forever. The cooking draws from a tight regional pantry but lands somewhere unexpected, with emulsions and jus deployed with enough precision that "bold combinations" never tips into chaos.
