A Michelin-starred restaurant in a quiet Colomiers address, where the menu reads like a tour of Occitan geography: foie gras and duck from the South-West, oysters from the Étang de Thau, Blanquette de Limoux. The chef trained under Alain Ducasse and Gilles Goujon, and the cooking shows it without shouting about it. His partner runs the room with an ease that makes the whole thing feel personal rather than ceremonial.
