Màloma sits inside Foster, an ecosystem of farmers, artisans, and entrepreneurs who take sustainability rather seriously. The restaurant itself is bright and elegantly appointed, with a menu built almost entirely around vegetables and fruit, fish or meat making only occasional appearances. The chef lets the ingredients do the talking, which sounds humble until you see what he does with a pumpkin flower. A farm-to-table spot worth the drive into the Belgian countryside.
